Indulgent Mac & Cheese

It was my turn to cook last weekend and I wasn't really in the mood for anything too complicated so I decided to whip together a quick mac & cheese as one thing we always have in the cupboard is pasta and lots of it!! So I used a Jamie Oliver recipe as the base for mine but decided to make it a little bit more my own and just a touch more indulgent and decadent. 


Ingredients
- 200g pasta 
- 100g grated Parmesan
- 100g marscapone 
- 100g ricotta 
- 30ml semi-skimmed milk 
- handful fresh chopped oregano 
- 1 ball of mozzarella 
- 1tsp olive oil infused with truffle 
- 1 tsp grated nutmeg 

Method 
1. Pop your pasta in a pan of boiling water with a teaspoon of salt for about 10/12 minutes or until al dente (i.e. Still with a little bit of chew in the middle) 

2. Whilst your pasta is cooking, in a large pan fry the chopped oregano in some butter for 30 seconds then leave this to one side until the pasta is done. 

3. Drain the pasta and add to the pan with butter and oregano and add in the marscapone, ricotta, Parmesan and milk and stir thoroughly on a low heat until all the cheese has melted and coated the pasta. 

4. Stir through the olive oil infused with truffle and place all your cheesy pasta into a casserole dish. 

5. Top with the grated nutmeg, torn up mozzarella and a sprinkling of ground Parmesan and pop in the oven at 180 degrees Celsius for 10-15 minutes or until the top has gone golden brown. 

Then all that's left for it is to dive in and enjoy!
